Chickpea pancakes go by a variety of names – socca, farinata, calentica and more – and are found the world over. They’re increasingly showing up on the menus of restaurants across America. And with crisp brown edges and tender, flavorful centers that can easily support a variety of flavorings and toppings, what’s not to love? We explore the growing trend, and share some delicious recipes.

We’ve also been thinking a lot about fried chicken lately. Jonathan Gold’s review of Howlin’ Ray’s Hot Chicken and list of six favorite Asian fried chicken joints inspired us to come up with a list of our favorite recipes – you know, when you’re craving a little of the fried love at home. And with summer in high gear, we’ve also compiled a list of some of our favorite seasonal plum dishes and cocktail recipes.
MAKE YOUR OWN CHICKPEA PANCAKES
Garbanzo bean flour, water, a touch of salt and olive oil are all it takes to make socca, simple but flavorful chickpea pancakes. What’s more, the pancakes are both vegan and gluten-free, and they make a great appetizer or light meal. Jeanne Kelley shares her technique, along with three great recipes.
