Beauty’s Appeal

Sonoko Sakai’s article (“Faithful to the Core,” Jan. 9) reminded me of when I was living in Hong Kong, watching some of the older Chinese men take such great pains to peel their oranges so that the peels came out looking like works of art. It was always interesting to see many of these men, who were itinerants living in total poverty, yet still having the awareness to admire the qualities of food--the beauty and the taste that food can offer.
