Matzo: An unleavened flat bread eaten during the eight days of Passover. The dough, a mixture of flour and water, is worked very quickly and baked in a very hot oven so it does not have a chance to rise.
Matzo Meal: Coarsely ground matzo, used in place of bread crumbs or flour.
Matzo Cake Meal: Almost powder-fine ground matzo, used in place of bread crumbs or flour.
Matzo Farfel: Coarse pieces of broken-up matzo, resembling corn flakes. Replaces pasta and noodles in baking. Delicious mixed with fresh or dried fruit and milk as a breakfast cereal.
Matzo Cereal: Resembles cream of wheat. Replaces other hot cereals for Passover; also used to thicken sauces and stuffings.
Passover Potato Starch: Finer than matzo cake meal. Another replacement for flour.
All the above products are sold in kosher stores and most supermarkets during Passover.
