The Agriculture Department’s chicken inspection program offers little protection against food poisoning organisms that can cause stomachache, diarrhea and other flu-like symptoms that strike down millions of Americans each year, a National Academy of Sciences study said. One improvement would be to tag each of the 4 billion chickens eaten by Americans each year with a warning label telling consumers to cook their birds properly and take other precautions.
