Substance Fights Decay

BOSTON — Chocolate may fight tooth decay, say researchers at the Forsyth Dental Center, who suspect a chemical substance, also found in coffee, tea and unsweetened fruit juices, somehow inhibits chemical reactions leading to plaque buildup and cavities.
In a separate study made at Fairleigh-Dickinson University, researchers say that adding calcium lactate to candy prevents most sugar-fed bacteria from eating away at tooth enamel.
